Tim Kovach, former owner
of the Salifish Restaurant, started the brewery in 1993
and produced the beer inside the restaurant, then in
1994 he built the brewery next door and had the brewing
equipment built to create a 4-barrel
brewery.
Back in the day I was a
homebrewer, so being able to have my own brewery was
very special and unexpected. I brought Greg Boyer on
board to help with the brewery. He is an avid brewer
and cook. We have brewed many different beers since I
took over.
